A while back, CC wrote about using cheap Japanese white wine in umeshu. I
tried it out, and the batch was ready for drinking yesterday.

My wife in particular was very pessimistic about the chances of it coming
out well. When she tasted it, though, she liked it a lot -- more than the
other batch we did with that "white liqueur" stuff.

I can't comment on it personally -- umeshu makes me retch -- although I must
say that a sip of the stuff made from white wine made me slightly less
nauseous than the other batch.
