Cooper's is pretty much a boutique (albeit a good one, and
increasingly large one). They didn't make a stout during the time I
was in Australia, or if they did, it didn't make it to Sydney. Made an
excellent series of ales and had the best home brewing kits.
Tooth's and Co went bankrupt when I was a kid. I've no idea who owns
the name these days, but the Kent Brewery is an apartment complex
opposite the Broadway campus of UTS.

Baird Brewing in Numazu make(/made?) a nice brew, the "shimaguni
stout". Bryan the owner is an American though.
