Actually, the starred restaurants appearing in the new Michelin guide 
seem to fall into three categories: French, ryotei, and sushi. This 
would account for the fact that the number of establishments receiving 
three stars is higher in the Tokyo guide than in the guide for any other 
city in the world, including Paris and New York. I would suppose they 
sent reviewers who were qualified to make judgments on the variety of 
food served.

Also, since the Michelin reviewers are anonymous, complaints of "our 
quintessentially Japanese establishment was reviewed by an ignorant 
gaigin" are complete speculation anyway.
