Hmm, I'm not sure if I can help you.  If I convert from RAW to JPEG then 
view the JPEGs via Adobe PhotoShop, the pictures can be viewed as any size I 
like.

Is it when you're printing them that they come out tiny?  If so, try this:

File->Print Preview
Select Page Setup and select Portrait or Landscape as required
Select OK, then in the Print Preview window, select Scale to Fit Media ... 
and the printable picture will be re-sized to fit the selected paper.
Alternatively, just drag the corner of the picture in Print Preview until 
you get the size you want.
