I even dip my regular tempra into vinegar. Nowadays, I'm dipping them
into Chinese "Chinkiang Vinegar". It's like a Chinese version of
"Balsamico vinegar" of Italia. But "fish and chips" with Western apple
vinegar is also good. Vinegar decomposes excess oil so it's good for
health. In Kinai, we originally use a lot of vinegar. The origin of
sushi is Kinai, and unlike today's "Edo-mae-sushi", every fish of
Kinai sushi(usually called as Osaka-sushi) is soaked in vinegar.
