Grill the chicken and then either cut or tear into small strips. Roll
it into the sushi just like you would crab, fish, etc. We grill with
soy sauce and haven't branched out to try anything else; we did pork
and steak once as well. We rolled with avacado and other veggies. My
theory is that, in a general sense, if it tastes good with rice it'll
probably taste okay in a sushi roll. In Korea we'd take the seasoning
packs from spicy ramen and mix it with steamed rice and then roll in
seaweed; it was easy to make and carry while hiking/climbing. My
friend said he started doing that in the Korean Army when they were on
long overnight marches.
